THIS IS A FAMILY RECIPE, THAT MY MOM GAVE TO ME AND IT IS SO GOOD AND I MAKE THIS RECIPE EVERY CHANCE I CAN GET, BECAUSE THAT HOW MUCH I LOVE SWEET POTATO CASSEROLE : )

Ingredients

FOR THE CASSEROLE

5 large
sweet potatoes
1/4 tsp
salt
1/4 c
butter
2
eggs
1 tsp
vanilla extract
1/2 tsp
nutmeg
1/2 c
white sugar
2 Tbsp
heavy cream

FOR THE TOPPING

1/2 c
butter, softened
6 Tbsp
all purpose flour
1 1/2 c
packed light brown sugar
1 c
chopped pecans
1 c
minture marshmallows

Step-By-Step

1PREHEAT OVEN TO 350 DEGREES. SPRAY A 9X13 INCH BAKING DISH WITH NON-STICK COOKING SPRAY. SET ASIDE.

2BAKE SWEET POTATOES 35 MINUTES IN, PREHEATED OVEN UNTIL THEY BEGIN TO SOFTEN, WHEN COOL PEEL. IN A LARGE BOWL, MASH THE SWEET POTATOES. MIX IN THE SALT, 1/4 CUP OF BUTTER, EGGS, VANILLA EXTRACT, NUTMEG, SUGAR, AND HEAVY CREAM. POUR INTO THE BAKING DISH. SET ASIDE.

3IN A MEDIUM BOWL, COMBINE THE REST OF THE BUTTER ALONG WITH THE FLOUR, BROWN SUGAR, AND CHOPPED PECANS. MIX WITH A PASTRY BLENDER TO THE CONSISTENCY OF COURSE MEAL. SPRINKLE OVER THE SWEET POTATO MIXTURE. SPRINKLE THE MINIATURE MARSHMALLOWS OVER THE TOP.

4BAKE FOR 30 MINUTES AT 350 DEGREES, UNTIL TOPPING IS CRISP AND MARSHMALLOWS ARE LIGHTLY BROWNED.
