Sweet Potato Fool
I didn't put a assemble time because it depends on if you use fresh sweet potatoes or canned sweet potatoes.

- cooked,pureed sweet potatoes or 1 can(15 0z) sweet potatoe puree
- 1/4 c
- firmly packed light brown sugar
- 1/2 tsp
- 1/4 tsp
- 1 c
- heavy cream
- 3 Tbsp
- powdered sugar
- gingersnap cookies,coarsely crushed
1Combine sweet potatoes,brown sugar,cinnamon,ginger in medium bowl,stirring until well blended.
2Beat cream in large bowl with electric mixer until thick.Gradually add powdered sugar,beat until stiff.
3To assemble: Layer 1/2 of gingersnaps in a 2 quart glass bowl.
Spread with 1/2 of sweet potato puree' & 1/2 whipped cream.
Layer remaining gingersnaps,sweet potato puree' & whipped cream.
Chill 1 hour before serving.
