Place graham crackers in food processor and pulse till fine crumbs. Pour out onto flat plate.
Heat pan or griddle to med. high. Lightly coat one side of tortilla with spray oil or melted butter. Lay sprayed side down on top of graham cracker crumbs and press to coat.
Now spray or brush pan or griddle with spray oil or butter then lay tortilla coated side down on pan, place a generous amount of mini morsels on tortilla and then marshmallows. Repeat process with second tortilla and lay coated side up on top of marshmallows. Place a lid on top and cook until chocolate starts melting (make sure griddle is not too hot or it will burn tortilla). Flip and brown other side of tortilla while marshmallows melt.
