Salted Peanut Cookie Chews

Ingredients

1 1/2 c
flour
2/3 c
packed brown sugar
1/2 tsp
baking powder
1/4 tsp
baking soda
1/2 tsp
salt
1/2 c
butter softened
1 tsp
vanilla extract
2
large egg yolks
3 c
mini marshmallows

TOPPING

2/3 c
light corn syrup
1/4 c
butter
2 tsp
vanilla extract
12 oz
peanutbutter chips
2 c
rice krispies
3 c
coarsley chopped salted peanuts

Directions Step-By-Step

Preheat your oven to 350 degrees
Combine crust ingredients, except marshmallows. Mix with your hands until a nice crumb mixture forms. Press in an ungreased 9 x 13" pan. Bake for 12 to 15 minutes till light brown. Sprinkly marshmallows on crust and put back in the oven for an additional 2 minutes. Just want the marshmallows to begin to puff. Cool while making the topping.

In a large non stick pan, heat the light syrup, butter, vanilla and chips till smooth. Turn off heat and add the rice krispies and nuts. Mix so the coating in incorporated well.

Immediately spoon over marshmallows and spread evenly. Chill in the fridge for 2 hrs. Cut in small squares and enjoy.
