pumpkin crepes

I was just craving pumpkin crepes and didn't have a good recipe for them. So early one morning I experimented and came up with this recipe. This has turned out to be a favorite recipe for both my daughter and myself. We're the pumpkin lovers in the family.

Ingredients For pumpkin crepes

  • 1 sm
    can of pumpkin puree
  • 1 sm
    box of waffle mix
  • 4
    eggs
  • 1 1/2 c
    milk, heavy cream, or 1/2 & 1/2
  • 1/4 c
    cinnamon & sugar mix
  • 1 tsp
    nutmeg
  • 1 tsp
    ground cloves
  • 3 Tbsp
    butter, melted

How To Make pumpkin crepes

    Sauce: 2 Bananas 2 or 3 tbls Butter 1/4 C Brown Sugar or Sugar in the Raw Cane Sugar In a small sauce pan, place the two (ripe) bananas in the bottom of the pan and mash them down with a wire whisk. Then add the butter and the sugar and heat over a medium heat just until it starts to bubble and then immediately remove from the heat.

    Mix all ingredients in a large mixing bowl until smooth (hand beater works best for this).

    Spray pan with olive oil and heat to a medium heat. Then pour in mixture and roll it around to cover the bottom of the pan. As the crepes begins to roll on the edges, start working the crepe so that you can either flip it or toss it to flip it to complete the cooking process. (This works best with a high quality non stick pan)

    Pour the sauce over the crepe (pancakes or waffles) and top with real whipped cream and walnuts for an extra special presentation (and treat)!
