1 lb cream cheese, softened to room temperature
2 stk butter softened to room temperature
2 lb powdered sugar
1 Tbsp amaretto liqueur
2 tsp almond extract
2 c chopped nuts ( i used half pecans & half walnuts)

Rose Mary's Notes:

This is the frosting I made to go with the Over The Top Italian Cream Birthday Cake that I made for my husband 3 months after his birthday had passed.

He was really impressed, and really likes the nuts that were IN the frosting instead of on the outside of the cake ON THE FROSTING.

It is easy and the addition of the Almond Extract and Amaretto really did wonders to enhance the flavor of the frosting.

It is a winner in our household, and I am sure it will become one of your favorites as well.

 

Directions

Prepare the frosting by adding the softened butter and cream cheese to a medium size bowl, and beat till creamy, then add about half of the powdered sugar and beat again till well mixed.

Then add remaining powdered sugar, almond extract, and amaretto, beat till incorporated into frosting.

Then with a spatula fold in the chopped nuts and stir till nuts are blended into frosting. Then frost cake or cup Cakes as desired.

Holly it really did take the Over the Top Italian Cream Birthday Cake & Frstng to a new level. I usually had been posting the frostings with the cake, then it occured to me for those that are looking for a frosting just may not find the recipe if it is only posted with the cake. I still have not had the time to go thru mu other recipes and pull out the frosting recipes and post them separately, but I will eventually.

Hey Rose Mary, I got a question for you or anyone that can answer. I'm sure you've tasted the icing from some delis or bakeriesthat is really smooth and creamy but taste like a VERY good vanilla ice cream. Now, the question, do you know what kind of icing it is and do you have the recipe?
I asked the deli over here and the response was, "We don't make it here. We order it and I don't know what kind it is.", I asked if I could get one of the empty 5 gallon buckets and they said they couldn't give them away. I didn't ask how much they were if someone wanted to buy one.
