luc's crêpes

This is a recipe that my husband makes every weekend. We pour on real maple syrup and roll them up! This recipe could also be used for dessert crêpes or savory crêpe dishes. Makes about 20, 8" crêpes.

Ingredients For luc's crêpes

  • 4 c
    milk
  • 3 c
    white flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 Tbsp
    sugar
  • 1 tsp
    pure vanilla extract
  • 4
    large eggs
  • 4 Tbsp
    butter, melted

How To Make luc's crêpes

  • 1
    Bring the milk to room temperature.

    Mix the flour, salt, baking powder and sugar together. Put this mixture in the mixing bowl.

    Slowly stir in about 1/2 of the milk, or a bit more, to get a smooth, thick mixture.

    In a separate container, lightly beat the eggs.
  • 5
    Add the melted butter (not too hot), eggs and rest of the milk to the mixer.

    Add the vanilla

    Let rest a few minutes before cooking.

    Grease your pan. Pour about 1/4 of a cup of batter at a time into a hot pan, depending on the size of pan you are using. Swirl it around to thin it out a little bit. Cook until brown and flip. Brown the second side.
