Miss Mom when I make these. When baked each will have custard on the bottom and cake on top! Can also see recipe in 1937 edition of "My New Better Homes and Garden" under Desserts

Ingredients For lemon cups

  • 1 c
    sugar
  • 4 Tbsp
    flour
  • 1/8 tsp
    salt
  • 2 Tbsp
    melted butter
  • one lemon rind, grated
  • 5 Tbsp
    lemon juice, fresh
  • 1 1/2 c
    whole milk
  • 3
    egg yolks, well beaten
  • 3
    egg whites, stiffly beaten

How To Make lemon cups

  • 1
    Oven at 325 degrees
  • 2
    Prepare a hot water bath - a 9 x 12 metal baking pan. Add enough water that would come up almost to top of GREASED custard cups (I heat this up in the oven while making recipe)

    Combine sugar, flour, salt, butter
  • 4
    Mix juice and rind, and add to sugar mixture
  • 5
    Combine egg yolks and milk and add to above mixture. Mix well
  • 6
    Fold in egg whites, pour into greased custard cups
  • 7
    Bake in pan of hot water (water bath) for approximtely 45 minutes
