We love crunchy peanut butter and cherry jam together. Baked in a bar, you'd better grab one while you still can. I always have to make three batches so everyone gets seconds.

These double crunch peanut butter and jam bars are fantastic! The salty peanut butter and sweet cherry jam are a lovely flavor combination. Using crunchy peanut butter along with chopped peanuts adds a satisfying crunch. We'd call these adult PB&J. If you can't find superfine sugar, add granulated sugar to a food processor and process for a minute or so.

Ingredients For double crunch peanut butter and jam bars

  • 2 stick
    plus 2 Tbsp unsalted butter, divided
  • 3 c
    plus 2 Tbsp all-purpose flour, divided
  • 1 1/2 c
    superfine sugar
  • 1 Tbsp
    neutral oil
  • 2 c
    crunchy peanut butter
  • 1 1/2 tsp
    vanilla extract
  • 2
    extra large eggs, room temperature
  • 1 tsp
    baking powder
  • 1 1/2 tsp
    salt
  • 1 1/2 c
    cherry jam
  • 1/2 c
    chopped salted peanuts

How To Make double crunch peanut butter and jam bars

  • Prep a baking dish.

    Preheat the oven to 350 degrees F. Grease and dust a 9 x 13 baking pan with 2 Tbsp of butter and 2 Tbsp of flour. Shake out the excess flour.
  • Cream butter and sugar.

    In a large bowl with an electric mixer, cream the butter and sugar on medium speed until light yellow, about 2 minutes, and nice and smooth.
  • Measure peanut butter into oiled measuring cup.

    With a clean hand, rub the oil on the inside of a 2-cup measuring cup before measuring the peanut butter. It won't stick that way. Measure out the crunchy peanut butter.
  • Add vanilla extract, peanut butter, and egg.

    With the mixer on low, add the vanilla, eggs, and peanut butter to the creamed butter. Mix until combined.
  • Sift flour, baking soda, and salt.

    In a small bowl, sift the flour, baking powder, and salt.
  • Add flour to peanut butter mixture.

    With the mixer on low, slowly add the flour mixture to the peanut butter mixture.
  • Stir until just combined.

    Mix just until combined.
  • Press 2/3 of the dough into the prepared pan.

    Spread two-thirds of the dough into the prepared pan. Use a knife to spread it evenly.
  • Spread cherry jam over the dough.

    Spread the jam evenly over the dough.
  • Add remaining dough over the jam.

    Add the remaining dough by the tablespoonful and spread gently over the jam. The remaining batter will not completely cover the jam which is a good thing since the beautiful cherry jam will shine through.
  • Sprinkle chopped nuts.

    Sprinkle with the chopped peanuts.
  • Bake the peanut butter and jam bars.

    Bake for 45 minutes or until golden brown.
  • Cut bars into squares.

    Cool. Then cut into 20 bars.
