I love making Sopapilla bars, but wanted to change it up for the holidays. I adapted a couple of my favorite recipes and came up with this. My husband has officially given up pumpkin pie for these.

Ingredients For creamy pumpkin-pie squares

  • 2 can
    pillsbury crescent seamless dough
  • 8 oz
    cream cheese, softened
  • 14 oz
    sweetened condensed milk
  • 2
    eggs
  • 15 oz
    pumpkin
  • 1/2 tsp
    salt
  • 3 1/2 tsp
    pumpkin pie spice (divided)
  • 1/2 c
    butter, melted
  • 1/2 c
    sugar

How To Make creamy pumpkin-pie squares

    Preheat oven to 400 degrees F. Spray bottom of 9 X 13 pan with nonstick spray. Lay one Crescent Dough in bottom of pan. Bake for 5 minutes, then remove from oven. Reduce temperature down to 350 degrees F.

    In large mixing bowl, blend Cream Cheese until smooth. Gradually add Sweetened Condensed Milk. Blend in Eggs, Pumpkin, Salt and 2 tsp Pumpkin Pie Spice. Pour filling on top of Crescent Dough. Bake for 15 minutes, then remove from oven.

    Lay 2nd Crescent Dough over top of filling, stretching to the edges. Pour butter on top of dough. Mix Sugar and 1 1/2 tsp Pumpkin Pie Spice together and sprinkle over Dough. Bake 25 minutes, or until top is browned and mostly dry.

    Cool completely and store in refrigerator. Cut into 40 squares before serving.
