I got this recipe from an old farmers almanac (favorite cookies) that belonged to my Grandma..I love older recipe's..those ladies sure knew how to cook!..My Gram used to make this..Enjoy!! Make sure you use the dark and brown sugar as directed to get the best results!

Ingredients For coconut, pecan squares

  • 1/2 c
    ( 1 stick) butter, softened
  • 1/2 c
    cup packed dark-brown sugar
  • 1 c
    all purpose flour
  • 2
    eggs
  • 1 c
    packed light-brown sugar
  • 1 c
    chopped pecans or walnuts, i used both
  • 1/2 c
    shredded coconut tossed with 2 tablespoons flour
  • 1 tsp
    vanilla extract
  • pinch of salt
  • confectioners' sugar

How To Make coconut, pecan squares

    Gather ingredients. Preheat oven to 350 degree. Spray 8 x 8 pan with cooking spray.

    Cream butter and dark-brown sugar, then add the 1 cup flour and mix well.

    Press into a greased 8x8-inch pan and bake at 350 degrees F for 20 minutes.

    Meanwhile, beat the eggs until frothy. Gradually add light-brown sugar and beat until thick.

    Add pecans, coconut tossed with flour, vanilla, and salt. Mix well.

    Spread over crust and bake for 20 minutes longer, or until brown.

    Cool on rack. Sprinkle with confectioners' sugar and cut into 1-inch squares.
