Banana Crumb Muffins

These are a moist tasty muffin with a cinnamon and brown sugar streusel topping. A great way to use up those ripened bananas!
The grand kids love these, especially when I add some chocolate chips!
I saved this recipe about five years ago from another recipe site/submitted by Lisa Kreft.

Ingredients

1 1/2 c
all purpose flour
1 tsp
baking soda
1 tsp
baking powder
1/2 tsp
salt

bananas, mashed **
3/4 c
granulated sugar
1
egg, lightly beaten
1/3 c
butter, melted or 1/3 cup oil
1/3 c
brown sugar, firmly packed
1 c
chocolate chips (optional)
streusel topping
2 Tbsp
all purpose flour
1/8 tsp
ground cinnamon
1 Tbsp
butter
**i prefer to use 2 bananas and 3/4 cup unsweetened applesauce. it makes a nice moist muffin.

Step-By-Step

1Preheat oven to 375ยบ. Lightly grease muffin cups or line with papers.
2In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, salt and (chocolate chips if using). In another bowl, mix together bananas, sugar, egg and melted butter.
3Stir the banana mixture into the flour mixture just until moistened.
Spoon batter into prepared muffin cups filling about 2/3 full.
4In a small bowl, mix together the brown sugar, 2 tablespoons of flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. (using about a 1/2 tablespoon per muffin).
Bake in preheated oven for 18-20 minutes (mine usually take 23 minutes) or until a toothpick inserted into center of muffin comes out clean.
