I got this one the first day of weight watchers. I am sure you can use different fruits or pudding mixes. I am not one to like diet things but this doesn't taste like anything diet and it would be great for a diabetic or someone wanting to watch their weight but have dessert.
Pour pineapple and it juice in a large mixing bowl. Stir in the pudding mix. Core and cut apples into bite size pieces and stir them into pineapple/pudding mixture. Fold in cool whip, cover and refrigerate. Enjoy. The number of people it will feed depends on the portion size. Diabetics will like this one and those watching their calories or "points"
