Anna's StoryI can't take credit for this one but found it on a blog called Cornfed Mama's I almost melted (which wouldn't be to difficult in 100 degree temps!!) when I saw the pic! I LOVE anything with apples and this looks soo yummy! I haven't tried it yet but I plan on doing that this weekend :)
Best part is you only use 1 measuring cup so hardly any dishes to wash :)
can of apple pie filling
(8 inch) flour tortillas
1Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla
2Sprinkle with cinnamon, roll up, tucking in edges; place seam side down in prepared dish.
3In medium saucepan over medium heat, combine butter,white sugar, brown sugar and water. Bring to a boil stiring constantly, reduce heat and simmer 3 minutes.
4Pour sauce over enchiladas and let stand 45 minutes
5Bake in preheated oven for 20 minutes, or until golden (she doesn't say what temp the oven should be on but I am guessing 350/400 (I will let you know once I try them)
6Serve with Vanilla Ice cream !!
