I can't take credit for this one but found it on a blog called Cornfed Mama's I almost melted (which wouldn't be to difficult in 100 degree temps!!) when I saw the pic! I LOVE anything with apples and this looks soo yummy! I haven't tried it yet but I plan on doing that this weekend :)
Best part is you only use 1 measuring cup so hardly any dishes to wash :)

Ingredients

21 oz
can of apple pie filling
6
(8 inch) flour tortillas
1 tsp
ground cinnamon
1/2 c
butter
1/2 c
white sugar
1/2 c
brown sugar
1/2 c
water

Directions Step-By-Step

1
Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla
2
Sprinkle with cinnamon, roll up, tucking in edges; place seam side down in prepared dish.
3
In medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil stiring constantly, reduce heat and simmer 3 minutes.
4
Pour sauce over enchiladas and let stand 45 minutes
5
Bake in preheated oven for 20 minutes, or until golden (she doesn't say what temp the oven should be on but I am guessing 350/400 (I will let you know once I try them)
6
Serve with Vanilla Ice cream !!

Bake at 350 degrees for 20 min. Per another website. I have made them twice with cherry pie filling. I put the cinnamon in the syrup. Delicious.

Made these delicious apple enchiladas over the weekend...TO DIE FOR!
I'll be making these a lot in the future. Such an easy recipe to put together, and I always have all ingredients on-hand.

Wish I had taken a picture as I couldn't find one online to do them justice.
