Ingredients For almond-filled cookie cake

  • 2 2/3 c
    flour
  • 1 1/3 c
    sugar
  • 1 1/3 c
    unsalted butter
  • 1/2 tsp
    salt
  • 1
    egg, slightly beaten
  • THESE ABOVE INGREDIENTS ARE FOR THE CRUST
  • THE FOLLOWING INGREDIENTS ARE FOR THE FILLING
  • 1 c
    finely chopped almonds
  • 1/2 c
    sugar
  • 1 tsp
    grated lemon peel
  • 1
    egg slightly beaten

How To Make almond-filled cookie cake

    PREHEAT OVEN TO 325. GREASE 9 X 10" SPRINGFORM PAN. IN A LARGE BOWL, BLEND ALL CRUST INGREDIENTS AT LOW SPEED UNTIL DOUGH FORMS. CHILL. DIVIDE IN HALF. SPREAD HALF INTO BOTTOM OF PAN.

    IN SMALL BOWL, BLEND ALL FILLING INGREDIENTS. SPREAD OVER CRUST TO WITHIN 1/2" OF PAN SIDES.

    BETWEEN WAXED PAPER, PRESS REMAINING DOUGH TO A 9-10" CIRCLE. REMOVE TOP LAYER OF WAXED PAPER PLACING DOUGH OVER FILLING. PRESS INTO PLACE, REMOVING OTHER PICE OF PAPER. BAKE AT 325 FOR 55-65 MINUTES, UNTIL LIGHTLY GOLDEN BROWN. COOL 15 MINUTES AND REMOVE FROM PAN.
