almond coconut granola

came up with this recipe, because I wanted to make a dessert topping ( great over yogurt or ice cream)and I had everything on hand.

Ingredients For almond coconut granola

  • 2 c
    oatmeal, uncooked
  • 1 c
    almonds, sliced
  • 1 c
    coconut, shredded & sweetened
  • 1 stick
    butter, melted
  • 1/2 c
    brown sugar, light
  • 1 Tbsp
    pure vanilla extract
  • 1 Tbsp
    almond extract

How To Make almond coconut granola

    combine the oatmeal, almonds and coconut, spread out on a flat sheet and bake at 350 for about 15 mins...mixing half way

    meanwhile,melt the butter with the brown sugar mix well, add the vanilla and almond extract. set aside
  • 3
    take out the granola mix from the oven and let cool ( about 5 mins) in a large bowl toss with the butter mixture and then spread out evenly in a large baking dish....put back in oven at 350 another 15-20 mins.....let cool...top your favorite yogurt, ice cream or just enjoy alone....yummy to the tummy
