grapefruit zest (white, pink or ruby red)

pink grapefruit juice

1Combine sugar, zest & water. Bring to boil. Remove from heat when sugar is dissolved. Add juices.
2Transfer sorbet mix to a storage container & refrigerate for 6 hours. Add lightly beaten egg white to mixture & mix thoroughly.
3Freeze sorbet mixture in freezer for 4 hours or longer before serving.
