Ingredients

1 1/3 C canned crushed pineapple in juice
1/4 C pineapple juice ( from the canned pineapple)
1/4 C sugar
1/2 cup coconut milk
1 tsp coconut extract
1 TBS rum ( optional adult popsicles only)

OH Yummy, . OutStanding Flavor, these are both Kid and Adult Friendly. Definately a Keeper once You make them.
The Perfect Hot Weather treat.

 

Directions

1
Puree the Pineapple with the Juice in a blender,
add Sugar, Coconut Milk and Extract. Blend til Smooth.

( optional;
Add Rum only if making these for the ADULTS)

Pour into Popsicle cups or Milds and freeze.
Freeze about 4 Hrs, til solid and serve.

To Stormy, I like them Cause I like to leave the Pineapple in bigger Bits and I can taste the Pineapple in them.
Besides I love Pineapple any way you fix it.

They sound amazing. have pibched and will be making soon. got the rum and coconutmilk and extract just not the pineapple

Yum...wonder how many calories and carbs they have...I love popsicles! But as a diabetic ... I always ask that question...lol

Penny Most Diabetics would Just Have to Do the Math. I don't Think in Moderation it would Hurt. Just Omit the Rum would help greatly.
Even tho its only 1TBS. . . in the entire batch. Not Much.

no worries....If it was too big a deal...I wouldn't bother...I been doing the diabetes thing a long time and know what I can get by with...thanks for the recipe...
