Whipped Ricotta With Honey and Summer Fruit

3/4 lb
fresh ricotta
1/4 c
heavy cream
1 tsp
vanilla extract
1 pt
fresh strawberries, hulled and halved, or 3 ripe plums or ripe nectarines,pitted and cut into eighths,
or 1 pint fresh figs stemmed and halved (or a combination of the three0
fresh black pepper
1/4 - 1/2 c
fresh mint springs for garnish


1Combine the ricotta,heavy cream and vanilla extract in a large bowl and whip using a whisk until light and fluffy,about 1 1/2 minutes (or place in a bowl and whip using a hand held mixer until light and fluffy)
2Spread the ricotta on a platter and top with the fruit, drizzle with some honey and season with a sprinkling of freshly ground pepper. Garnish with fresh mint sprigs.
