Pineapple with Port (Ananas ao Porto)

- 4 slice
- fresh pineapple, 1/2 inch thick each
- 2 tsp
- granulated sugar (see note)
- 1/4 c
- ruby port (or madeira)
- fresh mint leaves, for garnish
1Place each slice pineapple on dessert plate; sprinkle with sugar. NOTE: If pineapple is very sweet, omit the sugar.
2Sprinkle 1 tablespoon of the port over each pineapple slice. Cover and refrigerate at least 4 hours.
3Garnish with fresh mint leaves.
