Ingredients For pineapple fluff dessert - cassies

  • CRUST
  • 2 c
    graham cracker crumbs
  • 1/2 c
    butter, melted
  • 1/4 c
    sugar
  • FILLING
  • 1/2 c
    butter. softened
  • 1 1/2 c
    confectioners' sugar
  • 1
    egg
  • 1 tsp
    vanilla
  • TOPPING
  • 1 c
    whipping cream, whipped or ( two cups cool whip ) if using cool whip, disregard the sugar and vanilla
  • 3/4 c
    drained, crushed pineapple
  • 2 Tbsp
    sugar
  • 1 tsp
    vanilla
  • graham cracker crumbs or some coconut for garnish ( optional )

How To Make pineapple fluff dessert - cassies

    Preheat the oven to 325 degrees F. Place rack in center of oven. In a medium bowl, combine the graham cracker crumbs, sugar and 1/2 cup melted butter. Press the mixture into a 9x9 baking pan. Bake for 10 minutes, then cool completely on a wire rack.

    In a separate bowl, mix together the 1/2 cup softened butter, confectioners'sugar, egg, and vanilla with an electric mixer until smooth. Spread the mixture over the crust once it has completely cooled.

    Prepare your whipped cream: Beat the cream, sugar and vanilla until stiff peaks form. Fold in the drained crushed pineapple; blend well. Spread whipped cream, pineapple over butter filling. I then sprinkled a handful of sweetened coconut on top. Refrigerate for at least an hour before serving.
