Ingredients For orange sabayon

  • 3 lg
    oranges
  • 1 qt
    strawberries, fresh, hulled (about 4 c)
  • 4 lg
    egg yolks
  • 3 Tbsp
    sugar

How To Make orange sabayon

    Peel 2 oranges; cut into segments. Grate zest & squeeze 1/3 C juice from remaining orange. In large bow, combine orange segments, 1 Tbsp orange juice & strawberries; let stand.

    Meanwhile , in metal bowl, whisk together egg yolks, sugar, 1 tsp zest & remaining orange juice until blended. Place bowl over pot of gently simmering water over low heat; do not let bottom of bowl touch water. Cook, whisking constantly, until mixture is foamy, tripled in voume, holds lines of whisk & registers 170 degrees F on instant read thermometer, 5 - 6 minutes. Remove bowl from heat.

    Divide fruit between dessert dishes, spoon sabayon (custard) on top. Sprinkle with remaining zest. Serve warm.
