Ingredients For orange sabayon

3 lgoranges

1 qtstrawberries, fresh, hulled (about 4 c)

4 lgegg yolks

3 Tbspsugar
How To Make orange sabayon

1Peel 2 oranges; cut into segments. Grate zest & squeeze 1/3 C juice from remaining orange. In large bow, combine orange segments, 1 Tbsp orange juice & strawberries; let stand.

2Meanwhile , in metal bowl, whisk together egg yolks, sugar, 1 tsp zest & remaining orange juice until blended. Place bowl over pot of gently simmering water over low heat; do not let bottom of bowl touch water. Cook, whisking constantly, until mixture is foamy, tripled in voume, holds lines of whisk & registers 170 degrees F on instant read thermometer, 5 - 6 minutes. Remove bowl from heat.

3Divide fruit between dessert dishes, spoon sabayon (custard) on top. Sprinkle with remaining zest. Serve warm.
