Gotta love Blueberry Buckle , would make a great dessert for Thanksgiving and is a comfort food. Like to make this as it is easier then making a whole pie for me. Enjoy!! This recipe came from my Cookbook "Savoring Cape Cod" submitted by Judi Francis. Great old original recipes.

Ingredients For mother's blueberry buckle

  • 3/4 c
    sugar
  • 1/4 c
    margarine
  • 1
    egg
  • 1/2 c
    milk
  • 2 c
    flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    blueberries
  • CRUMB TOPPING:
  • 1/2 c
    sugar
  • 1/3 c
    flour
  • 1/2 tsp
    cinnamon
  • 1/4 c
    margarine

How To Make mother's blueberry buckle

    Preheat oven 375 degrees F. Mix sugar, margarine and egg together. Stir in milk. In seperate bowl sift together flour, baking powder and salt. Add flour mixture to sugar mixture. Mix well. Carefully fold in blueberries.

    Spread in 2 9" square pans (greased) or 1 oblong pan. Mix together crumb topping ingredients and sprinkle over batter.

    Bake for 30-45 minutes or until lightly golden around the edges. Cool before cutting into squares. Makes 24 squares.
