Charmaine's StoryThis recipe came from my aunt, she had created this recipe & it has been in our family for some time now - recipes are to be shared not kept!!
green mangoes, sliced for your desire
hawaiian salt or kosher salt
brown sugar, dark, packed
1 1/2 c
corn syrup, light
red food coloring drops
chinese five spice powder
1Peel mangoes, cut in halves, remove seed. Place in large jar. Sprinkle salt over mango pieces & let stand overnight. In oven 1st layer in deep shallow pan & dry in a 300 F oven for 3 1/2 hours with door open at broil position, or dry in sun for 4 days.
2Rinse salt & mix brown sugar with corn syrup, food coloring, allspice & 5-spice & spread on top of mangoes. Let soak for 1 day or until dried out & still moist.

Is this supposed to be 4 green mangoes or 40?

Its suppose to be 40 - with the seed shell or without it. But you can estimate it - my family recipes are like that...hahaha - I little of this & a little of that but I would play around with the pieces of the mangoes because it is placed in a mayonnaise jar & tossed around & dried in the oven. But its pretty close to it - I hope this helps. Much Mahalo's
