Got this recipe from a lady I worked with in a Nursing Home about 40 years ago make it every year when rhubarb is ready and I always think of this Dear Lady.

Ingredients

3 c
rhubarb (diced)
1 1/2 c
sugar
2 Tbsp
corn starch
1/3 c
water
1 tsp
vanilla
1/2 tsp
baking soda

CRUST AND TOPPING

1/2 c
butter
1 1/2 c
rolled oats
1 1/2 c
flour
1 c
brown sugar
1/2 c
chopped walnuts

Step-By-Step

1In a medium sauce pan combine rhubarb,sugar, cornstarch, water, vanilla,and soda.
2Stirring constantly bring to a boil and cook till thick and bubbly, rhubarb should be cooked down. Set aside.
3In a large mixing bowl cut butter into oats, flour, sugar, and nuts until crumbly.
4Spray a 13x9" pan (I use pam) pat 3/4 of the crumb mixture in the bottom of the pan.
5Spread rhubarb filling over crumb mixture in pan sprinkle rest of crumb mixture on top.Bake at 375 degrees for 30-40 minutes
6Remove from oven cool in pan, on wire rack ,makes about 2 dozen bars.
