Ingredients

1 c
thick cream
1/4 lb
peanut brittle, ground
1 c
rice, cooked dry and flaky
1 c
crushed pineapple, drained well
2 Tbsp
pineapple juice
powdered sugar
1 c
colorful mini marshmallows or just the mini white ones

Step-By-Step

1Whip the cream until light. Fold in gradually the ground peanut brittle;add the rice, pineapple, juice and enough powdered sugar to your taste. Fold in the mini marshmallows.
Pile lightly into glass serving bowl or into glass parfait dishes; decorate with candied cherries. Serve very cold.
