Ingredients

FRUIT
1 1/2 c peeled and cored pears
1 c peeled and cored gala apples
1 large sweet potatoe makes about 1 cup
1 c brown sugar, firmly packed
1/2 c sugar
1/2 c raisins
1 c chopped walnuts
3 Tbsp butter sliced in small pieces
1/4 c orange juice
1 Tbsp vanilla extract
1 Tbsp almond extract
1/2 tsp allspice, ground
1/2 tsp cinamon
1/2 tsp orange rind
CRUMBLE
1 c almond flour
1/2 stick butter melted
1/2 c brown sugar, firmly packed
1 c walnuts finely chopped
USE A 8X8X2" CASSEROLE DISH AND
BAKE AT 350 DEGREES FOR ONE HOUR
THEN REMOVE ADD TOPPING AND BAKE
ANOTHER 30 MIN.

A bit of fall is in the air. I have fresh pears from the neighbor's tree and one good looking sweet potatoe from my garden that was dug 3 weeks ago. Some good sweet Gala apples too.
So time to experiment, here is what I made and it is so very delish. Not friendly for diets but for the mouth watering surprise that awaits you who would even care?

 

Directions

Core and peel the apples and pears. Slice and cut into small pieces.

Tender the sweet potatoe by placing in boiling pot of water enough to cover the sweet potatoe. Let boil rapidly about 5 minutes. This helps the peeling process go fast.
Slice and quarter the sweet potaote in small bite size quarters.

Now in large mixing bowl add the fruits, raisins, nuts and all the spices together. Place in a 8 x 8 2" casserole dish.

In small mixing bowl place the almond flour and add brown sugar, walnuts and butter.
Mix with a fork till you have a crumble.
Set aside

Place in the oven center rack and bake. Bake for 1 hour and then remove add the crumble put back in and bake about 30 more minutes till crumble is browned.

Almond flour has a buttery taste and is very good so you do not need to add too much more butter to it.

YUM too!!! I would not have thought of adding potatoes, sounds and looks delicious, and I love using the crumble topping on so many things!!!

Sounds like a keeper to me..and ALMOND FLOUR I can handle that..

I need to try almond flour, especially for my baking. Jamie do you use same measurements as regular flour?

Lynn, when I told Diane about this coconut and almond flour it was only offered on the internet until I saw it in our local store it in now offered in food lion and Harris Teeter stores. Using Almond flour as a cake is 1/4 af to 3/4 wheat flour if you are trying to substitute for flour. Or is af and coconut flour. There are recipes on the internet you can check out under Bob's Red Hill
