Inez Kleppe's Best Ever Rhubarb Crisp

Genevieve Enderes - serve with ice cream or whipped cream. Can use frozen rhubarb. This is the best rhubarb crisp ever.

Ingredients

2 stick
butter/margarine
1 1/2 c
brown sugar
1 1/2 c
oatmeal
1 1/2 c
flour
1 tsp
cinnamon
4 c
rhubarb
2 Tbsp
cornstarch
1 c
sugar
1 c
water
1 tsp
vanilla

Directions Step-By-Step

Melt butter/margarine and mix with brown sugar, oatmeal, flour & cinnamon. Set aside.

Put cut up rhubarb in the bottom of a 9 x 13 pan

In saucepan mix the cornstarch and sugar. Add the water. Bring to boil. Add vanilla. Pour over rhubarb

Cover top with crumb mixture.

Bake at 350 degrees for 30-40 minutes.
