Gooseberry's are only in season for a few weeks each year but the freeze well. I got the original recipe from a friend in the Republic of Panama about 27 years ago and Have done some tweeking for my families tastes. My son LOVES these bars.

Ingredients For gooseberry suprise bars
- CRUST:

2 call-purpose flour

1 cbrown sugar

1 cbutter, cold
- TOPPING:

2eggs
-
1 cbrown sugar, firmly packed

1 1/4 call purpose flour

1/2 tspbaking powder

1/2 tspsalt

2 cgooseberries cooked ( i cook mine with 1 tbsp sugar per 1/2 cup berries and a little water for 10-15 minutes then hit with imersion blender till well blended.)

3/4 choney
How To Make gooseberry suprise bars

1CRUST: Blend together butter flour and brown sugar with pastry blender until crumbly and well blended. Press into pan and bake at 350 degrees for 20 minutes.

2TOPPING: Beat eggs and brown sugar until fluffy. Add baking powder and salt to flour; blend into egg mixture. Stir in gooseberries. Spread over baked crust. Bake for 20-25 minutes.

3Cool on cooling rack and cut into bars.
