Here is another favorite recipe from A Women's Paradise of recipes by the Associated Women For Pepperdine College cookbook that was published in 1962. Please note that this is not the same as a Fruit Cocktail Cake. The center is soft while the top is chewy and it is best served warm with Vanilla Ice Cream or Whipped Cream. My tweak was to add the melted butter to the topping because I found that it adds to the chewiness of this wonderful down home dessert!

Ingredients For fruit cocktail dessert

  • 1 c
    sugar
  • 1 c
    flour
  • 1 tsp
    soda
  • 1 lg
    egg
  • 1 can
    fruit cocktail, juice and all
  • 3/4 c
    chopped walnuts
  • 3/4 c
    brown sugar
  • 4 Tbsp
    butter, melted

How To Make fruit cocktail dessert

    Preheat oven to 325 degrees.

    Gather all ingredients.

    Beat egg.

    Add all ingredients except walnuts nuts, brown sugar and melted butter

    Blend together with spoon.

    Pour in 8x11 baking pan that has been sprayed with no stick cooking spray.

    Combine brown sugar and walnuts in bowl.

    Sprinkle brown sugar and nuts evenly on batter and pat down lightly. Drizzle melted butter over topping.

    Bake for 40-50 minutes until golden brown.
