FRESH APPLE SOUFFLE'
Reduce heat to low. Cover and simmer until apples are tender (about 10 minutes)
Remove saucepan from heat and cool apple mixture in the refrigerator for 10 minutes.
Meanwhile preheat oven to 450'.
Gently fold cooled apple mixture into into beaten egg whites.
Spoon mixture into a 2 quart souffle' dish.
Sprinkle confectioners' sugar over top of souffle'.
