Diabetic-Friendly Perfectly Poached Pears

- 1 c
- orange juice
- 1/4 c
- apple juice
- 1 tsp
- ground cinnamon
- 1 tsp
- ground nutmeg
- whole pears
- 1/2 c
- fresh raspberries
- 2 Tbsp
- orange zest
1In a small bowl, mix together orange juice, apple juice, ground cinnamon and nutmeg.
2Stir ingredients until evenly mixed and set aside.
3Peel pears, leaving the stems.
4Remove the core from the bottom of the pear.
5Place pears in a shallow sauce pan.
6Pour juice mixture over pears into pan and set over medium-heat.
7Simmer pears for 30 minutes, turning frequently.
8DO NOT BRING LIQUID TO A BOIL!
9Transfer pears to individual serving plates.
10Garnish plates with raspberries and orange zest.
11Serve immediately and enjoy!
