David's Cream Filled Crepes

This recipe is so simple it was even a hit at a tailgating party and easy to make on the grill. David simply warmed the fillings right in the cans in a pot of water while grilling sausages and creating one crepe after another in a small skiller

Ingredients

CREPES

2 large
eggs
1 c
milk
1 c
dry pancake mix
3 Tbsp
butter, melted
butter for the skillet

FILLING

1 pkg
soft cream cheese (8 0z.)
2 Tbsp
sugar
1 tsp
vanilla

TOPPING

1 can(s)
fruit pie filling (shown here with blueberry and cherry)

Step-By-Step

1Combine all crepe ingredients except butter for the skillet and blend till smooth

2Batter should be the consistency of half and half

3Refrigerate batter for at least one hour

4Combine filling ingredients and warm pie fillings

5To prepare crepes melt butter in a small non stick skillet and pour in batter. Cook over medium heat and carefully flip with a thin spatula

6Place cooked crepe on a plate, fill with cream cheese filling, top with warmed pie filling and sprinkle with powdered sugar
