Combine Brown Sugar, corn syrup and coloring in saucepan.
Cook over medium heat. Stir constantly until mixture begins to boil.
Cook over medium heat to about 250 degrees (use a candy thermometer for an accurate reading). Add Pure Cinnamon Oil; mix, remove from heat.
Tilt the pan and dip each apple into syrup. Let excess syrup drip back into saucepan.
Place sheet of wax paper on a cookie sheet. Place coated apples on wax paper to cool.
