Ingredients For blueberry donut bars

  • 6
    donuts, glazed (krispy kreme would be great)
  • 1 lg
    egg, beaten
  • 1/2 c
    almonds, sliced, roughly ground
  • 1/2 c
    butter, unsalted, melted
  • 1 Tbsp
    lemon zest, grated
  • 2 c
    blueberries
  • 2 Tbsp
    sugar
  • 1 Tbsp
    lemon juice
  • 1 1/2 Tbsp
    cornstarch
  • 1/4 c
    marshmallow creme
  • 1 1/2 tsp
    water

How To Make blueberry donut bars

    Preheat oven to 350 degrees F. Grease 8" square baking pan. In large bowl, crumble donuts. In small bowl, mix together egg, almonds, butter & zest. Add to donuts; stir to combine. Press 1/2 of mixture (about 2 C) into pan. Bake 8 minutes. Cool on rack.

    In small pot, over medium heat, stir together blueberries & sugar. Using fork, lightly mash berries until syrupy. In cup, stir lemon juice into cornstarch. Add to blueberry mixture; simmer over low heat, stirring, until thickened. Remove from heat. Cool 5 minutes. Spread over donut crust in pan.

    In microwavable safe bowl, microwave marshmallow creme on HIGH 20 seconds. Using fork; stir in water. Drizzle over blueberry layer. Top with remaining donut mixture. Bake 15 - 20 minutes or until crumbs start to brown. Cool completely on rack. Store in refrigerator.

    VARIATIONS: Try using different donuts, such as: frosted, plain, crumb-topped, devil's food, cinnamon or powdered sugar.
