baked cranberry pudding

I pass this cranberry bog all the time,  it is only about 10 minutes from my house.
Had to stop by and take a picture ~  the workers were scooping up all the ripe cranberries !

This recipe is from my cookbook "Lost and Vintage Recipes" This pudding was always served at Thanksgiving. Baked in the oven rather than steamed, takes much less time, but still served with the butter sauce, making it a traditional English pudding.

Ingredients For baked cranberry pudding

  • 2 c
    all purpose flour
  • 1 c
    granulated sugar
  • 2 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 3 Tbsp
    salted butter, melted,plus more for the pan
  • 2/3 c
    milk
  • 1 lg
    egg
  • 1 1/2 c
    fineily chopped cranberries
  • FOR THE SAUCE
  • 8 Tbsp
    (1 stick) salted butter
  • 1 c
    granulated sugar
  • 2/3 c
    light cream
  • 1/4 tsp
    vanilla extract

How To Make baked cranberry pudding

    Preheat oven to 305 degrees and grease an 8" square baking pan. Make the pudding : In a large mixing bowl, whisk together the dry ingredients. Add butter, milk, and egg and beat for 2 minutes. Stir in the crnberries. Pour mixture into the prepared pan. Bake until nicely browned and set in the middle, 40 to 45 minutes.

    Meanwhile , make the sauce: ------ In a small saucepan, melt the butter over low heat. Add sugar and cream and cook, stirring , over medium heat, until sauce is smooth. Remove the heat and stir in vanilla. Spoon warm sauce over individual servings . Yield: 6-8 servings
