baked cranberry pudding
This recipe is from my cookbook "Lost and Vintage Recipes" This pudding was always served at Thanksgiving. Baked in the oven rather than steamed, takes much less time, but still served with the butter sauce, making it a traditional English pudding.

2 call purpose flour

1 cgranulated sugar

2 1/2 tspbaking powder

1/4 tspsalt

3 Tbspsalted butter, melted,plus more for the pan

2/3 cmilk

1 lgegg
-
1 1/2 cfineily chopped cranberries
- FOR THE SAUCE
-
8 Tbsp(1 stick) salted butter
-
1 cgranulated sugar
-
2/3 clight cream
-
1/4 tspvanilla extract
How To Make baked cranberry pudding

1Preheat oven to 305 degrees and grease an 8" square baking pan. Make the pudding : In a large mixing bowl, whisk together the dry ingredients. Add butter, milk, and egg and beat for 2 minutes. Stir in the crnberries. Pour mixture into the prepared pan. Bake until nicely browned and set in the middle, 40 to 45 minutes.

2Meanwhile , make the sauce: ------ In a small saucepan, melt the butter over low heat. Add sugar and cream and cook, stirring , over medium heat, until sauce is smooth. Remove the heat and stir in vanilla. Spoon warm sauce over individual servings . Yield: 6-8 servings
