I came across this recipe on a coupon, of all places. It caught my eye immediately because I've never heard of any dessert like this. I am making it ASAP.

Ingredients

1 c
minute white rice or minute brown rice, uncooked
1 box
(1 oz.) instant sugar-free butterscotch pudding mix
1 can(s)
(16 oz.) solid pack pumpkin
1/2 tsp
pumpkin pie spice
1
container (12 oz.) non-dairy sugar-free whipped topping
1/2 c
chopped nuts (optional)
ground cinnamon (optional)

Step-By-Step

1Prepare rice according to package directions. Cool.
2In a large bowl, combine pudding mix, pumpkin and pie spice. Stir in rice. Fold in whipped topping.
3Top with nuts and ground cinnamon, if desired.
4Substitute regular pudding mix and regular whipped topping for the sugar-free versions if desired.
