I love warm rice pudding on a cool evening! You can add raisins to this if you'd like; just stir in 1/4 cup of raisins before pouring into dessert bowls.

Ingredients

1 c
cold, cooked rice
1 c
sugar
1/2 tsp
salt
1/4 tsp
ground nutmeg
2 c
milk
1 Tbsp
butter
1/2 tsp
vanilla extract
2 drops yellow food coloring (optional)
dollop of whip cream (optional)
1/4 tsp
ground cinnamon (optional)

Directions Step-By-Step

Combine rice, sugar, butter, salt, vanilla extract, milk, food color and nutmeg into 1-quart sauce pan. Stir over medium heat until thick and bubbly.

Let cool slightly; pour into dessert cups and allow to cool completely.

Garnish with a dollop of whip cream and sprinkle with a bit of cinnamon.
