Ben's Peanut Butter Pudding

Jane Manookin

My son is a peanut-butter-and-honey maniac! He also loves cinnamon apple sauce and bananas wrapped in peanut buttery tortillas. One day we got creative and came up with this gem. A friend, who isn't a big fan of peanut butter, tasted our pudding today...and finished off the leftovers!

Note: all measurements are approximate. I rarely measure anything.

Second note: I've adjusted amounts on the peanut butter, and thus the milk, too. The original recipe was almost 2000 calories per serving!

Food Processor

1/2 c
apple sauce
2 dash(es)
cinnamon (optional)
banana, peeled
1-2 Tbsp
milk (i use almond milk)
2-3 Tbsp
1/4 c
peanut butter
1 large
handful marshmallows
1/2 c
crisp rice cereal

1In a blender or processor, place apple sauce, optional cinnamon, milk, honey, and banana. Blend until smooth.
2Add peanut butter and blend. If it is too thick, you can drizzle in more milk. Carefully add marshmallows.
3At this point, you can blend in the cereal or sprikle it over each serving. Or leave it out altogether.
4Eat with a spoon or spread on toast or crackers!
