Sweet Potato Pie

My grandfather taught me how to make this pie. He made it at his diner in the 1920s.

Ingredients

1 stick
(1/2 c.) melted butter
3
eggs
3/4 tsp
lemon extract
1/4 c
evaporated milk
1 tsp
nutmeg
1 1/4 c
sugar
1 (9 in.)
uncooked pie crust
1 1/2 c
sweet potatoes, cooked and pureed

Step-By-Step

1Preheat oven to 350 degrees.
2In a food processor or blender, combine all ingredients except the crust. Process until well blended.
3Pour into the pie crust.
4Bake 50 minutes of until a knife inserted in the center comes out clean and pie in golden brown.
5Cool on a rack before cutting. Top with whipped cream if desired.
