Mmmm, I just took one of these out of the oven and it smells divine. I'm having it tomorrow for Thanksgiving. Always a hit!

Ingredients

2 c
cooked sweet potatoes
1-1/2 c
sugar
1/2
stick butter, melted
2
eggs
1/4 tsp
salt
2 tsp
vanilla extract
1
well rounded tsp. cinnamon
1/4 tsp
ground ginger
1/2 tsp
nutmeg
1 c
milk
prepared pie crust

Step-By-Step

1Preheat oven to 350.
Combine the potatoes, sugar, butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into a pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Baking time may vary based on your oven. Place the pie on a rack and cool.

2Serve with ice cream or whipped cream.

3NOTE: I would NOT use canned yams for this recipe. I would bake sweet potatoes and mash them.
