I love using fresh herbs and lemon balm is one of my favorites. It has a nice lemony fragrance and it tastes wonderful either as a tea or as an ingredient, pare it with fresh lemons and you are in lemon heaven! My 9 year old grandson loves this recipe and requests it often.

Ingredients

1 c
graham cracker pie crust
1/4 c
finely chopped pecans
1/4 c
melted butter
2 pkg
cream cheese, soften
1/4 c
sour cream
1/2 c
sugar
2
eggs lightly beaten
1 tsp
finely chopped fresh lemon balm
1/2 tsp
vanilla extract
1
lemon, juice and rind

Step-By-Step

1In a small bowl combine the first 3 ingredients and press into a pie pan, set aside.
2In a large bowl, I used my stand-up mixer, beat the cream cheese, sugar and sour cream until nice and smooth. Add the eggs and beat on low speed just until combined then add the vanilla, lemon balm, and the juice and rind of 1 lemon.
3Bake at 350° for 35 to 40 minutes or until the center is almost set. Cool on a wire rack.

Top with fresh strawberries and lemon sauce. See the attached recipe for my lemon sauce recipe.

Enjoy!
