Joy of Cooking Pumpkin pie filling

This is one my favorite & easy pumpkin pie fillings to make. When time is limited I use a pre frozen 9 inch pie shell. Its up to 55 minutes for baking, its takes about a hour, depending on your oven. I found this recipe on The Joy of Cooking web site.

Ingredients

3 large
eggs
1/2 c
heavy whipping cream
2 c
pumpkin puree
1/2 c
light brown sugar
1 tsp
cinnamon
1/2 Tbsp
ground ginger
1/8 tsp
salt

Directions Step-By-Step

Pre heat oven temperature to 375 degrees F (190 degrees C) and place rack in bottom third of the oven.

Place the baked pie on a wire rack to cool. Serve at room temperature. Store any leftovers in the refrigerator.

Makes one 9 inch pie.
