Cross Creek Old Country Woman's Butterscotch Pie

Cross Creek Florida has a lot of history and the restarent is still there,I believe.Where many famous people have eaten ,way before I was even born.I have eaten there and caught some of the finest fish in the creek that is between two lakes and called Cross Creek.

Ingredients

1 c
brown sugar
1 c
water
1 1/2 tsp
butter
1 large
egg yolk
2 Tbsp
flour
4 Tbsp
half and half
1/2 tsp
vanilla

Step-By-Step

1Put on sugar/water and butter to boil in pot.Beat egg yolk until light and add in 4 TBSP half and half that has been well whisked with the 2 TBSP flour.

2Stir into the syrup that has been boiling for 3 minutes.Lower the heat and cook until thick.

3Beat 2 egg whites until stiff and stir into thick mixture.Cool slightly and turn into a prebaked pie crust.Can put meringue on top=3 egg whites--1/2 tsp cream of tartar and 1 TBSP sugar whipped with a mixer until stiff peaks form,then put on pie and broil for a very few minutes until golden brown.
