My friend's husband gave me this recipe. It's a twisted to the traditional sweet potato pie but it's delicious.

Ingredients

2 1/2 lb
sweet potatoes
1/2 c
butter
2 tsp
grated lemon peel
1 Tbsp
pure vanilla extract
2 tsp
ground cinnamon
2 can(s)
sweetened condensed milk (14 oz)
2 tsp
nutmeg
1/2 tsp
salt
5 large
eggs
2 large
unbaked pie crust (deep dish)

Step-By-Step

1Boil sweet potatoes (skin on) in a large pot until tender. Drain and peel off the skin.

2Heat oven to 350

3. Beat sweet potatoes and butter in large bowl until smooth

4Add sweetened condensed milk, lemon peel, vanilla, cinnamon, nutmeg, salt and eggs; mix well. Pour into crusts.

5• BAKE 40 minutes or until golden brown. Cool. Garnish as desired (I usually sprinkle nutmeg, sugar and a little lemon juice on the top to give it extra flavor and a lil crunch)
