~ Banana Cream Pie ~

- heavy cream
- 1/3 c
- + 1 tablespoon flour
- 3/4 c
- 1/4 tsp
- lightly beaten yolks - save the whites if making meringue
- 1 tsp
- 2 Tbsp
- cream, nuts and caramel ~ optional
Whisk together flour, salt and sugar in a medium saucepan.
Over medium heat, once milk is scalded, whisk it into the flour mixture. Continue stirring until thickening.
Pour a small amount of pudding into the yolks and whisk quickly. Pour the yolks back into the mixture and continue cooking for another minute. I add a few drops of yellow food coloring now. Completely optional.
Cool pudding to lukewarm, doesn't have to be completely cool.
I don't put meringue on my pie, so I just add some plastic wrap to the top of the pudding and finish cooling completely.
Once cool, I top with whipped cream, nuts, caramel and some banana for garnish.
