My hubby loves pie's but can't eat regular sugar so i use Splenda..As you can see by the picture it has raisins.The original recipe calls for 2/3 c. raisins but i found out that the raisins sink to the bottom so i leave them out..

Ingredients

2 c
milk
3/4 c
sugar or splenda
1/2 c
all purpose baking mix
4
eggs
1/4 c
(1/2 stick) butter melted (i nuke it for 1 min.lol)
1 1/2 Tbsp
brandy (optional)
1 1/2 tsp
vanilla extract
1 1/3 c
coconut, flaked

Step-By-Step

1PREHEAT oven to 350F place milk, sugar, eggs, butter, brandy and vanilla in a bowl mix good using a spoon then add baking mix. Use electric mixer on medium for 3 minutes
2POUR into a greased 9 inch pie plate..(I use an 9 inch round baking dish. it's deeper) sprinkle with coconut do not stir.
3Bake 40 minutes or until pie is set in center and top is golden brown. cool on wire rack. serve warm or at room temp.
4To Prevent Spillover:: place pie plate (or baking dish) on a baking sheet. This helps to stabilizes the pie and prevents spillover
