Ingredients

FILLING

4 lb
apples, granny smith (may use less tart apples if you like)
2 Tbsp
corn starch, slightly heaped
1 stick
butter
1 c
light brown sugar
1/3 c
granulated sugar
1 Tbsp
cinnamon
1/2 tsp
nutmeg
1/4 tsp
allspice
scant 1/4 c
water

CRUST

1 recipe for 10" double pie crust; i like ina garten's recipe
1
egg white, beaten with about a tablespoon of water
1 Tbsp
sugar, to sprinkle on crust

Directions Step-By-Step

Wash, peel, core and slice apples. You can toss them with a bit of lemon juice to prevent browning. Then sprinkle corn starch over apple slices and toss to coat. Pile into prepared pie crust, doming slightly in the middle.

In a sauce pan, add remaining filling ingredients, melt butter and bring to a simmer, stirring frequently until sugars are disolved.

Pour liquid ingredients over apples, cover with top crust, cut decorative vents in top crust,and place pie on lowest rack of preheated 400 degree oven for 15 minutes. Reduce heat to 350, bake for 30 to 40 minutes. Brush with egg white beaten with a tablespoon of water, sprinkle with sugar, return to oven and bake an additional 15 to 20 minutes until filling is bubbly, and crust is browned.
