Ingredients For ~ coconut bars ~

  • 1/2 c
    softened, butter
  • 1/2 c
    light brown sugar, packed
  • 1 c
    flour
  • FILLING
  • 2
    eggs
  • 1 c
    packed, brown sugar
  • 1 tsp
    vanilla
  • 1/4 tsp
    salt
  • 3 Tbsp
    flour
  • 1 tsp
    baking powder
  • 3 1/2 oz
    sweetened coconut
  • 1 c
    chopped, nuts

How To Make ~ coconut bars ~

    Preheat oven to 350 degree F. Cream butter with sugar, in a small bowl. Work in flour, thoroughly combining. Pat evenly into the bottom of a 9 x 13 ungreased baking pan. Bake for 10 - 12 minutes or until golden. Set aside to cool.

    In a medium bowl, beat eggs until light colored. Beat in brown sugar.

    Beat in vanilla, baking powder, flour and salt. Fold in the coconut and nuts.

    Spread evenly over the cooled crust and bake for20 - 25 minutes or until firm to the touch.

    Let cool and cut into squares.
