Ingredients For chocolate cherry mini tarts

  • 2 c
    powdered sugar
  • 1 c
    vanilla wafer crumbs (30 wafers)
  • 1 c
    ground almonds (4 ounces whole)
  • 1/2 c
    unsweetened cocoa
  • 6-7 Tbsp
    milk
  • cherry almond filling (below)
  • candied cherry halves
  • FOR THE CHERRY ALMOND FILLING
  • 1 pkg
    3 ounces cream cheese, softened
  • 2 c
    powdered sugar
  • 1 tsp
    vanilla
  • 1/4 tsp
    almond extract
  • 1/2 c
    coarsely chopped blanched almonds
  • 1/4 c
    candied cherries, quartered

How To Make chocolate cherry mini tarts

    Combine powdered sugar, wafer crumbs, ground almonds, and cocoa in medium mixing bowl. Sprinkle in milk, mixing until ingredients are moistened and cling together. Shape into walnut size pieces; place in small paper lined muffin cups (1 3/4 inches in diameter). Press dough against bottom and up side of each cup to form shell; chill until firm.

    Prepare Cherry Almond Filling: Beat cream cheese in small mixer bowl. Gradually add powdered sugar, vanilla, and almond extract; beat until well blended. Stir in almonds and cherries. Spoon into tart shells. Garnish with candied cherry halves. Chill until firm.
